Tomato, apple and celery soup

This light and lovely soup can be prepared ahead and reheated when you’re ready to serve.

What you need

100 g butter
1 1/2 onions, peeled and finely chopped
275 g tomatoes, wiped
275 g apples, cut into 4 (no need to core)
275 g celery (head end, preferably), cut into large pieces
150 ml dry sherry
1 pinch grated nutmeg
1 pinch ground ginger
seasoning
1 l vegetable stock

Method

  1. Melt butter in a large pan (with tight fitting lid).

  2. Add the chopped onion and cook slowly until golden, not brown.

  3. Add the rest of the vegetables, sherry, nutmeg, ginger and seasoning.

  4. Close the pan with a tight fitting lid – or cover with a double thickness of greaseproof paper (well dampened with cold water) and then place on lid.

  5. Cook gently for 1 hour.

  6. Add the stock. Liquidise the soup in batches. Then pass the soup through a fine sieve into a clean pan.

  7. Reheat to serve, checking the seasoning.
