Basic cheese sauce
A useful recipe. Serve over vegetables to turn a side dish into a light meal. You could use any cheese you have in the fridge - use more if a mild cheese.
What you need
- 25 g butter
- 25 g plain flour
- 600 ml hot milk
- seasoning
- 100 g mature cheddar cheese, grated
- 4 tsp ready made mustard
- seasoning
Method
Melt the butter in a saucepan. Add the flour and stir for a short while, without letting it brown.
Add the hot milk, stirring all the time until it comes to the boil - so that it thickens smoothly without going lumpy. Allow to simmer for about 10 min.
Stir in the cheese, bring to the boil and stir until smooth.
Just before using the sauce, add the mustard and season to taste.

Cook's tip
Use Stilton cheese to serve with grilled pork or steak.
