Barbecue relish

This relish can be served hot or cold. Serve with grilled meat - particularly good with ham or gammon.

What you need

25 g butter
1 onion, peeled and finely chopped
400 g canned tomatoes
6 tsp vinegar
6 tsp demerara sugar
6 tsp sweet pickle or chutney
1 dash worcestershire sauce
1/2 tsp dijon mustard

Method

  1. Melt the butter gently in a pan. Add the onion and cook for 5 min until soft - not brown.

  2. Add the remaining ingredients and mix well. Bring to the boil and simmer for 10 min.

  3. Serve hot or cold.
