Barbecue relish
This relish can be served hot or cold. Serve with grilled meat - particularly good with ham or gammon.
What you need
- 25 g butter
- 1 onion, peeled and finely chopped
- 400 g canned tomatoes
- 6 tsp vinegar
- 6 tsp demerara sugar
- 6 tsp sweet pickle or chutney
- 1 dash worcestershire sauce
- 1/2 tsp dijon mustard
Method
Melt the butter gently in a pan. Add the onion and cook for 5 min until soft - not brown.
Add the remaining ingredients and mix well. Bring to the boil and simmer for 10 min.
Serve hot or cold.
Serving suggestion
Ham or gammon.
