Meatloaf ramekins

Individual meatloaves with tomato topping

What you need

1 medium onion
1 large carrot
50 g porridge oats
170 ml passata
2 tsp worcestershire sauce
1 beaten egg
450 g minced beef or pork
2 tsp dried thyme (or fresh if available)
1 fresh tomato - large enough to fit in the top of a ramekin when sliced

Method

  1. Heat oven to 200°C.

  2. Finely chop or briefly process the carrot and onion. Fry in a little olive oil until soft. Add to the mince, egg, Worcestershire sauce, half the thyme and 75 ml passata and oats. Mix well, press into well oiled ramekins and pour the remaining creamed tomatoes on top.

  3. Place the fresh tomatoes on top and sprinkle with a little sugar the remaining thyme and season with the salt and pepper. Bake uncovered for 50 minutes.
