Fresh lime souffle

A Toph recipe - a very subtle, light & refreshing end to any meal.

What you need

6 Fresh limes
4 Fresh eggs
125 g caster sugar
570 ml double cream
25 g gelatine

Method

  1. Grate the zest of the limes, using the finest cutter on your grater

  2. Squeeze the juice from the limes & add to the zest.

  3. Separate the eggs & add the yolks to the juice/zest & add the caster sugar.

  4. Place in a saucepan & then add your gelatine.

  5. Heat this mixture up gently & keep stirring to avoid the eggs scrambling!

  6. Whisk the egg whites to a firm/peak consistency, set aside

  7. When your juice mixture has dissolved the sugar place into a food mixer & whisk the mixture on full speed until it has cooled down to a less than blood temperature.

  8. Continue mixing & then add a small amount of cream initially, then add the rest until the mixture thickens to a smooth consistency. Do not over beat as you could curdle the mixture.

  9. Now fold in the egg whites, adding a third followed by the remainder carefully.

  10. Put the mixture into a prepared souffle dish & refrigerate for 1 days

  11. Decorate & serve.
