Kebbe nayye (raw meat kebbe)

Raw meat dish mixed with borghol and spices is a good starter and one of the best dishes among the Lebanese mezze

What you need

100 g lamb meat
3 tsp borghol or bulgar wheat
1 tsp onion
1 tsp salt
1/2 tsp white pepper

Method

  1. Chill the meat well then process in a food proccessor until creamy, add an ice cube to keep the meat cold otherwise it will change color.

  2. Wash the borghol in cold water and drain. Let it stand for 5 minutes, the borghol with soften a little.

  3. Mix the meat with the borghol, finely chopped onion, salt and pepper.

Serving suggestion

Serve with arabic bread, olive oil, onions, mint or you may cook some minced lamb meat with onions and serve it hot with the cold kebbe
