Tagliatelle and spinach gratinee - microwave

A filling and nutritious pasta dish.

What you need

225 g dried tagliatelle
1 pinch salt
3 tsp vegetable oil
25 g butter
1 small onion, peeled and finely chopped
450 g frozen spinach, thawed
150 ml single cream
seasoning
100 g cheddar cheese, finely grated
25 g fresh white breadcrumbs
15 g butter
For sprinkling
3 tsp grated parmesan cheese
1 pinch grated nutmeg

Method

  1. Place the tagliatelle with the oil, in a large bowl. Cover with boiling, salted water. Cover the dish and cook on 100% (FULL) power for 3 min. Stir, then reduce to 30% (MEDIUM LOW) power for 7-8 min until pasta is 'al dente' when tasted.

  2. Melt 25 g butter in a large bowl for 1 min. Add the onion, cover and cook on 100% (FULL) power for 2 min. Add the spinach and heat through on 100% (FULL) power for 3 min. Stir in the cream. Season to taste.

  3. Arrange layers of the tagliatelle, spinach and finely grated Cheddar cheese in a serving dish. Cover and heat through on 100% (FULL) power for 5-6 min. Scatter over the breadcrumbs. Dot with the remaining butter. Sprinkle with the Parmesan cheese.

  4. Cook uncovered on 100% (FULL) power for 2-3 min until the butter is melted or, alternatively, brown under a hot preheated grill. Serve immediately, sprinkled with a little grated nutmeg.

Cook's tip

Try spinach or tomato flavoured pasta for the colour effect, or even wholemeal pasta for a 'nutty' taste.
