Creamy mushrooms on toast

Toasted Ciabatta works especially well in this recipe. Dried mushrooms could be used instead of fresh.

What you need

3 tsp sunflower oil
50 g butter
350 g closed cup mushrooms, wiped and quartered
125 g oyster mushrooms, torn
125 g shiitake mushrooms, halved
2 cloves garlic, peeled and chopped
6 tsp fresh parsley, chopped. Save a little unchopped parsley for garnish.
6 tsp creme fraiche
3 tsp worcestershire sauce
50 g soft cheese with garlic and herbs
8 slices bread, toasted

Method

  1. Heat oil and butter in a large frying pan. Add all the mushrooms and garlic and cook for 3 min, stirring frequently.

  2. Add parsley. Stir in creme fraiche and Worcestershire sauce. Cook for 1 min. Finally crumble in cheese and stir until almost melted.

  3. Serve on the toasts. Garnish with parsley.

Cook's tip

Don't soak mushrooms in water as they will act as a sponge and the flavour will be much weaker.
