Individual ham and asparagus quiches

These bite-sized hors d'oeuvres are ideal for entertaining large groups of people.

What you need

25 g asparagus spears
25 g ham
8 mini pastry croustade cases
1 medium egg
65 ml milk
50 ml double cream
seasoning

Method

  1. Preheat oven to 180°C.

  2. Finely dice the asparagus and ham. Divide between the cases.

  3. Whisk the egg well. Add the milk and cream. Season and mix well.

  4. Pour into the cases and place on a baking tray. Cook in oven for about 10-15 min, or until set and golden brown in colour.

  5. Serve hot or chilled, as preferred.
