Mozzarella and olive pizza

A very simple pizza base made without yeast topped with traditional Italian ingredients. Look out for a low fat type of Mozzarella or Cheddar cheese if a low fat diet is being followed.

What you need

225 g self-raising flour
seasoning
50 g butter
150 ml milk
6-8 tomatoes, finely chopped
175 g mozzarella cheese, thinly sliced
6 pitted black olives
1 hard boiled egg, shelled and sliced
4 anchovy fillets

Method

  1. Sift flour and salt into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Add the milk and mix to a soft dough.

  2. Divide dough into four and roll each piece out to a 15 cm round.

  3. Cook the bases in a lightly greased frying pan on both sides for about 10 min.

  4. Preheat a medium grill.

  5. Place pizza bases on a baking sheet. Arrange tomato on top of cooked base along with sliced Mozzarella, olive halves, hard-boiled egg slices. Place anchovy fillets on top of the cheese.

  6. Grill pizza until cheese has melted and filling is hot.

Cook's tip

If anchovies are too salty, soak them in a little milk first. Drain them before using.
