Gloucester cheese palmier biscuits

These lovely palmier biscuits are great to serve with ice cream or fresh fruit.

What you need

225 g puff pastry
1 egg, beaten
100 g double gloucester cheese, grated
6 tsp fresh mint, chopped finely

Method

  1. Preheat oven to 220°C.

  2. Roll out the pastry to a rectangular 30 cm x 25cm. Brush with beaten egg.

  3. Mix the cheese with the mint. Scatter evenly over the pastry. Working from both of the long sides, roll up tightly, until the rolls meet in the centre.

  4. Using a sharp knife, cut into 15-20 even slices. Transfer to a baking sheet and flatten slightly with a round-bladed knife.

  5. Bake for about 15 min or until brown and crisp. Cool on a wire rack.
