Easy omelette
Once the basic rules are followed for this recipe, various fillings and toppings may be added to suit your taste.
What you need
- 2 large eggs beaten
- 3 tsp cold water
- seasoning
- 1 tsp butter
Method
Heat a 15 - 18 cm omelette pan over a very gentle heat. Beat the eggs, water and seasoning together.
Melt the butter and, when it just sizzles, pour in egg mixture. With a palette knife or wooden spatula, draw the mixture from sides to middle of pan, allowing the uncooked egg to run to base of pan and set.
When the base is firm and light golden brown, the top should be like soft scrambled egg. Add your chosen prepared filling such as grated cheese or chopped ham and fold over.
Serve on a hot serving plate.

Butter gives a better flavour, but margarine or oil can be substituted. Bacon fat can also be used.
