Mixed mushroom stroganoff

A medley of fresh mushrooms served in a creamy sauce.

What you need

250 g brown rice, rinsed
6 tsp olive oil
1 bunch salad onions, trimmed and chopped
2 cloves garlic, peeled and crushed
175 g large open cup mushrooms, wiped and sliced
125 g blewit mushrooms, sliced
200 g horse mushrooms, halved
125 g shiitake mushrooms
3 tsp paprika
60 ml fresh parsley, chopped
300 g creme fraiche

Method

  1. Cook rice according to pack instructions.

  2. Meanwhile, heat oil in large pan and cook salad onions and garlic for 2 min. Stir in all the mushrooms. Cover and cook over a gentle heat for 8 -10 min, stirring occasionally.

  3. Add paprika and parsley. Stir in creme fraiche and heat through gently for about 4 min.

  4. Serve with the cooked rice.

Serving suggestion

Serve this dish on a bed of freshly cooked noodles if you don't like rice.

Cook's tip

You could replace creme fraiche with soured cream or thick double cream.
