Melon and pineapple wine cup
A delicately fragrant dessert, perfect for summer outdoor entertainment. Make ahead so they are well chilled.
What you need
- 600 ml china tea
- 1 small ripe melon
- 6 tsp lemon juice
- 1 ripe small pineapple
- 25-50 g caster sugar (according to taste)
- 2 l dry white wine, well-chilled
- 1 sprig-2 sprigs fresh mint
Method
Make and strain the tea.
Halve the melon. Put the melon seeds into a bowl. Add the lemon juice. Pour the hot tea over the seeds. Add the sugar. Leave until cold.
Cut the melon pulp into very small balls or dice.
Cut away the pineapple skin. Slice the fruit and cut into very small dice. Discard the core.
Strain the melon seeds from the tea and discard.
Add the wine, herbs and the diced fruit. Chill well before serving.
