Make more than you need and keep chilled.

What you need

60 ml olive oil
3 tsp white wine vinegar
1 tsp lemon juice
1 tsp finely grated lemon rind
1/4 tsp soft brown sugar
seasoning
1/4 tsp dijon mustard

Method

  1. Place all the ingredients in a food processor or blender. Process until smooth, or whisk vigorously in a bowl. Alternatively, place in a screw top jar and shake well.

  2. Keep chilled until required.
