Mixed fruit gratin

An 'any time of the year' dessert using a medley of fresh fruits.

What you need

2 kiwi fruit, peeled and sliced
2 large oranges, peeled and segmented
8 plums, halved, stones removed and quartered
225 g strawberries, hulled and halved
juice of 1 orange
3 tsp cointreau liqueur
75 g butter, softened
25 g demerara sugar
To decorate
finely grated rind of 1 orange

Method

  1. In a bowl, mix together the kiwi, oranges, plums and strawberries. Spoon into an ovenproof dish. Pour over the orange juice and Cointreau and toss to coat well.

  2. In a small bowl, mix together the butter and sugar then scatter all over the fruit.

  3. Place under a medium preheated grill and grill for 3-5 min until butter has melted and the fruit has warmed through. Decorate with the orange rind and serve.
