Cherry tomatoes filled with finest Waldorf salad

Easy finger buffet food.

What you need

16 cherry tomatoes
1 stick celery, trimmed and finely diced
1 small apple, quartered, cored and finely diced
25 g chopped walnuts
6 tsp mayonnaise

Method

  1. Place the tomatoes in boiling water for 4-5 seconds. Refresh immediately in a bowl of cold water and carefully peel.

  2. Slice off the tomato tops and scoop out the seeds.

  3. Mix together the remaining ingredients and use to fill the tomatoes. Take care not to over fill. Serve immediately.
