Choc-nut shell cookies

These cookies have an attractive marbled effect.

What you need

125 g butter
50 g icing sugar
175 g plain flour
75 g cornflour
seasoning
1 tsp vanilla essence
2 tsp milk
2 tsp cocoa powder, sifted
50 g pecan nuts, finely ground
To decorate
30 g melted plain chocolate
30 g melted white chocolate

Method

  1. Preheat oven to 190°C.

  2. Beat the butter until softened. Sieve together the icing sugar, flour and cornflour. Add to the butter with the salt, essence and milk. Mix until well incorporated and a smooth dough is formed.

  3. Divide dough in half. Knead the cocoa powder into one half and the pecan nuts into the other half. Lightly knead the two halves together, to give a marbled effect.

  4. Spoon the mixture into a piping bag, fitted with a large star nozzle. Pipe small shapes, spaced well apart, onto ungreased baking trays.

  5. Bake in the oven for 12-14 min until firm and golden. Allow to cool slightly. Transfer to a wire rack with a palette knife to become crisp and cool completely.

  6. Decorate the cooled biscuits with a drizzling of melted plain and white chocolate.
