Mushrooms topped with goat's cheese and ham

A quick snack to make.

What you need

40 g unsalted butter
45 ml olive oil
3 tsp paprika
4 large open cup mushrooms such as portabella
4 slices honey roast ham
100 g goat's cheese
45 ml fresh flat leaf parsley, chopped
2 tsp oil, for greasing

Method

  1. Preheat oven to 190°C.

  2. Melt butter and olive oil together in a large frying pan. Add paprika and cook for a few seconds. Add mushrooms and cook on both sides for about 1 min.

  3. For each mushroom, oil a square of foil. Place each mushroom, stalk side up, on the foil. Place a slice of ham, folded in half, a round of goats' cheese and parsley on each mushroom. Drizzle remaining oil and paprika over the top. Fold foil to make loose parcels, sealing edges together well.

  4. Cook in oven for 12 min.

  5. Remove from foil and serve immediately.
