Quick grilled mushroom burger
A quick recipe that gives you the full flavour of mushrooms.
What you need
- 4 rashers rindless bacon, optional
- 4 large open cup mushrooms such as portabella, wiped
- 4 tsp sunflower oil
- 4 slices cheddar cheese
- 4 baps
- 100 g salad leaves
- 3 rashers rindless bacon, optional
Method
If using bacon, cook under hot grill for about 8-10 min, turning once.
Brush each mushroom lightly with oil and grill for 3 min. Turn over and grill for a further 2 min.
Meanwhile, put a cheese slice on one half of each bap and grill until cheese begins to melt. Top each bap half with a mushroom, some salad leaves, the bacon, if using, and the other half of the bap.
Serving suggestion
Sweetcorn, onion or tomato relish
Cook's tip
If making this for a vegetarian omit the bacon and use vegetarian cheese.
