Griddle pancakes

These Scotch pancakes are at their best when just cooked and still warm. They are delicious served simply with a knob of butter or with preserves, honey or syrup.

What you need

100 g self-raising flour
6 tsp caster sugar
1 medium egg, beaten
150 ml milk

Method

  1. Mix together the flour and sugar in a large bowl. Make a well in the centre. Stir in the egg with enough milk to make a batter the same consistency as thick cream when beaten together.

  2. Drop 4 small spoonfuls of the mixture, spaced well apart, onto a lightly greased hot griddle or heavy-based frying pan.

  3. Cook the pancakes for 2-3 min at a steady heat, until bubbles rise to the surface of the pancake and burst. Then turn the pancakes with a palette knife and cook for a further 2-3 min until golden. Keep the pancakes warm whilst cooking the remainder.

  4. Serve the pancakes while still warm with butter or preserves, golden or maple syrup, or honey.
