Cappuccino cookies
Try sandwiching two cookies together with a little butter icing.
What you need
- 125 g butter, at room temperature
- 50 g icing sugar
- 175 g plain flour
- 75 g cornflour
- 1 pinch salt
- 1 tsp ground cinnamon
- 3 tsp coffee essence
- To decorate
- 3-6 tsp sifted cocoa powder
Method
Preheat oven to 190°C.
Beat the butter until soft. Sieve together the icing sugar, flour, cinnamon and cornflour. Add to the butter with the salt and essence. Mix until well incorporated and a smooth dough is formed.
Spoon the mixture into a piping bag fitted with a large star nozzle. Pipe small shapes, spaced well apart, onto ungreased baking trays. Dredge with a little sifted cocoa powder.
Bake in oven for 12-14 min until firm and golden. Allow to cool slightly. Then transfer to a wire rack with a palette knife to become crisp and cool completely.

This cookie mixture can also be rolled out on a slightly floured surface and cut into shapes using a selection of cutters.
