Cappuccino cookies

Try sandwiching two cookies together with a little butter icing.

What you need

125 g butter, at room temperature
50 g icing sugar
175 g plain flour
75 g cornflour
1 pinch salt
1 tsp ground cinnamon
3 tsp coffee essence
To decorate
3-6 tsp sifted cocoa powder

Method

  1. Preheat oven to 190°C.

  2. Beat the butter until soft. Sieve together the icing sugar, flour, cinnamon and cornflour. Add to the butter with the salt and essence. Mix until well incorporated and a smooth dough is formed.

  3. Spoon the mixture into a piping bag fitted with a large star nozzle. Pipe small shapes, spaced well apart, onto ungreased baking trays. Dredge with a little sifted cocoa powder.

  4. Bake in oven for 12-14 min until firm and golden. Allow to cool slightly. Then transfer to a wire rack with a palette knife to become crisp and cool completely.
