Fruit Madeira

Make a bought cake go further when those unexpected visitors arrive. Ring the changes by using fruits in season.

What you need

1 madeira cake, unsliced
100 g red jam, warmed and sieved
75-100 g desiccated coconut
3-6 tsp cointreau liqueur
300 ml double cream, lightly whipped into soft peaks
175 g fresh strawberries, hulled and sliced
1 banana, peeled, sliced and dipped into 30 ml lemon juice

Method

  1. Brush the cake with the jam. Coat with the coconut.

  2. Carefully cut a triangle-shaped piece of cake from the top of the cake and remove.

  3. Place the cake on a serving plate. Sprinkle the liqueur in the cut. Spread with any remaining jam.

  4. Spoon half the cream into the cut. Top with half the strawberries and banana. Spoon in remaining cream.

  5. Cut the triangle piece of cake into slices and place in the cream.
