Grape clafouti

Quick, easy and tasty: this dish works well served hot or cold.

What you need

25 g plain flour
1 pinch salt
1/4 tsp ground mixed spice
3 tsp caster sugar
6 tsp milk
1 egg
50 g seedless black grapes
1 tsp chopped pecan nut
To decorate
1 tsp icing sugar
1 sprig fresh mint

Method

  1. Preheat oven to 180°C.

  2. Sift the flour into a bowl with the salt, spice and sugar.

  3. In a cup, beat together the milk and egg. Make a well in the flour. Pour in the milk mixture. Beat until well mixed.

  4. Arrange the grapes in the base of a lightly greased 150 ml round individual ovenproof dish. Pour over the batter.

  5. Place on a baking tray and bake for 15-20 min, or until firm and golden brown.

  6. Sprinkle with a little icing sugar. Decorate with a sprig of mint. Serve hot or cold.

Cook's tip

If preferred, fresh or canned cherries can be used instead of the grapes - or even strawberries.
