Watercress, fennel and apricot salad

A simple salad to make with lots of texture and colour.

What you need

Salad
1 bulb fennel, quartered and thinly sliced
1 bunch watercress, tough stalks removed
8 apricots, peeled, halved and stoned
For the dressing
6 tsp walnut oil
1 tsp dijon mustard
6 tsp white wine vinegar
100 ml soured cream
seasoning
To serve
150 g radicchio lettuces

Method

  1. In a bowl, mix the fennel with the watercress and apricots.

  2. Put all the dressing ingredients in a jug and mix well.

  3. Serve the fennel salad in the centre of a bed of raddichio. Serve with the dressing.
