Watercress, fennel and apricot salad
A simple salad to make with lots of texture and colour.
What you need
- Salad
- 1 bulb fennel, quartered and thinly sliced
- 1 bunch watercress, tough stalks removed
- 8 apricots, peeled, halved and stoned
- For the dressing
- 6 tsp walnut oil
- 1 tsp dijon mustard
- 6 tsp white wine vinegar
- 100 ml soured cream
- seasoning
- To serve
- 150 g radicchio lettuces
Method
In a bowl, mix the fennel with the watercress and apricots.
Put all the dressing ingredients in a jug and mix well.
Serve the fennel salad in the centre of a bed of raddichio. Serve with the dressing.
Serving suggestion
Serve with French bread to mop up the salad dressing.
Cook's tip
If apricots aren't in season, use ready-to-eat ones instead.
