Herby baked egg with ham

This light snack is good for a breakfast, brunch, starter or lunch. Serve with toast or crusty bread.

What you need

15 g butter
3 tsp double cream
3 tsp fresh mixed herbs, chopped
seasoning
1 egg, beaten
25 g smoked ham, diced

Method

  1. Preheat oven to 200°C.

  2. Place the butter in a ramekin dish. Place in the oven and heat through for 1-2 min or until melted.

  3. Beat the cream, herbs and seasoning together. Break the egg into the ramekin and sprinkle over the ham.

  4. Pour over the cream mixture and cook for 4-6 min in the oven. Serve immediately.
