Mustard chicken

A quick and easy recipe.

What you need

450 g skinless boneless chicken breasts, diced into 2 1/2 cm pieces
1 tsp dry mustard
2 tsp plain flour
6 tsp olive oil
100 g button mushrooms, wiped and halved
60 ml dry white wine
150 g greek yogurt
1-2 tsp wholegrain mustard
seasoning
To garnish
1 pinch paprika

Method

  1. Cut chicken into strips about 5 cm long. Mix the dry mustard and flour together in a polythene bag. Shake well and add the chicken.

  2. Heat half the oil in a frying pan and fry chicken for 3-4 min or until brown. Remove chicken and keep warm.

  3. Add remaining oil to pan and saute mushrooms until a pale golden brown.

  4. Return chicken to pan, pour in wine, stir in yogurt and grainy mustard and season well. Bring to boil, reduce heat and simmer for 3-4 min. Garnish with a sprinkle of paprika.
