Tomato and mushroom muffins

Old English muffins can be bought plain or savoury and are ideal for keeping in the freezer as a stand by.

What you need

100 g closed cup mushrooms, wiped and sliced
6 tsp water (approx)
1 tsp worcestershire sauce
1 tsp wholegrain mustard
1 wholemeal muffin
2 tomatoes, sliced

Method

  1. Put the mushrooms, water, Worcestershire sauce and mustard together in a small saucepan. Simmer over a gentle heat, stirring occasionally.

  2. Meanwhile, split the muffin in half and toast on both sides. Top each half with sliced tomato and grill until heated through. Spoon the mushroom mixture over the top.
