Lemon iced ginger twists

These pastries are deliciously tangy and nice and easy to make.

What you need

175 g plain flour
1/2 tsp ground ginger
1/2 tsp bicarbonate of soda
50 g butter
50 g muscovado sugar
50 g stem ginger, finely chopped
6 tsp stem ginger syrup
For the icing
50 g icing sugar
2-3 tsp lemon juice
yellow food colouring
50 g chopped pistachio nuts

Method

  1. Preheat oven to 180°C.

  2. In a large bowl, sift together the flour, ginger and bicarbonate of soda. Rub in the butter until it resembles fine breadcrumbs. Stir in the sugar and stem ginger. Mix in the syrup to form a smooth dough.

  3. Roll out the dough and cut into 4 long strands, 1cm wide. Twist together in pairs. Place the twists on greased baking trays. Bake in the oven for 15 min.

  4. Cut each twist into 7 while still hot. Transfer to a wire rack to cool.

  5. Meanwhile, to make the icing: sift the icing sugar and mix to a smooth and quite thin consistency with the lemon juice and about 2 tablespoons of water. Add a little yellow food colouring if liked.

  6. Spoon a little of the icing over each biscuit to coat. Sprinkle over the chopped pistachios and leave to set.
