Leek and cheese tortilla

Mexican flour tortillas are available in most supermarkets and make a pleasant change from pasta.

What you need

3 tsp oil
225 g leeks, trimmed and sliced
225 g cooked potatoes, diced
1 red pepper, de-seeded and sliced
3 eggs, beaten
45 ml milk
seasoning
75 g red leicester cheese, grated

Method

  1. Heat oil in a large non-stick frying pan. Saute leek, potato and pepper for about 5 min or until leek is soft.

  2. Beat together eggs, milk and seasoning. Pour into pan and cook gently until egg sets. Gently move the cooked egg from sides of pan to allow uncooked egg to take its place. When egg is just set, sprinkle the cheese over the surface. Place under a hot grill until cheese melts and bubbles. Serve.
