Orange and pork stroganoff

Tangy and tasty, this stroganoff and pasta dish is a quick and complete meal for one.

What you need

100 g fresh tagliatelle verdi
1 1/2 tsp vegetable oil
1 small onion, peeled and sliced
100 g pork fillets, trimmed of any excess fat and cut into thin strips
25 g button mushrooms, wiped and halved
3 tsp brandy
50 ml soured cream
finely grated rind and juice of 1 small orange
1 small orange, peeled and segmented
1 tsp chopped fresh sage
seasoning

Method

  1. Place tagliatelle in a pan of boiling water. Bring to boil then simmer for 8-10 min, or according to pack instructions.

  2. Meanwhile, heat the oil in a frying pan. Add the onion and fry for 1 min until softened slightly. Add pork and mushrooms. Fry for 4-5 min until browned. Transfer pork mixture to a warmed dish and keep warm.

  3. Add the brandy to the pan with the soured cream, orange rind and juice, orange segments, sage and seasoning. Simmer together gently for 1-2 min until warmed through.

  4. Return pork mixture to the pan and mix together. Drain pasta thoroughly. Arrange on a warmed serving plate topped with the pork.
