Rice pudding

The rice pudding is cooked on the hob in this recipe. The more the milk evaporates, the more you pour in and the creamier the texture will be.

What you need

50 g pudding rice
50 g short grain rice
600 ml whole milk
6 tsp caster sugar
50 g sultanas, chopped
rind of 1 lemon, finely grated
1 pat unsalted butter

Method

  1. Put the rice, milk, sugar, sultanas and lemon in a heavy-based pan.

  2. Cover and cook gently for 15 min. Then remove the lid and cook uncovered for a further 15 min, stirring occasionally. Add a little extra milk if necessary.

  3. Stir in butter to taste and serve.
