Flambe banoffee pancakes

The sticky butterscotch sauce is a superb accompaniment to the rum soaked bananas with the pancakes adding a touch of sophistication.

What you need

25 g butter
5 large bananas, peeled and sliced
50 g caster sugar
60 ml light rum
8 pancakes
For the butterscotch sauce
50 g unsalted butter
60 ml soft brown sugar
6 tsp golden syrup
60 ml single cream
To decorate
3 tsp icing sugar for dusting

Method

  1. Melt the butter in a frying pan. Add the bananas and sugar. Stir gently until the sugar has dissolved. Add the rum and carefully flambe using a lighted taper. Stir gently to mix. Remove from the heat and leave to cool.

  2. Place half the pancakes on serving plates.

  3. Divide the bananas between the pancake. Then place the remaining 4 pancakes on top of the bananas.

  4. To prepare the butterscotch sauce, put the butter, sugar and syrup in a saucepan and heat gently for 2-3 min, stirring until well blended. Bring to the boil for 1 min. Reduce the heat and add the cream. Stir until well blended. Pour the sauce onto the serving plates around the pancakes.

  5. Dust with icing sugar and serve immediately.
