Grilled polenta with mushrooms and smoked haddock

This Italian food comes in quick-cook granular or ready-cooked blocks that you just have to reheat. Polenta can be very bland but here it is served in a delicious mustard sauce.

What you need

6 tsp olive oil
450 g open cup mushrooms, wiped
60 ml creme fraiche
1 1/2 tsp dijon mustard
60 ml fresh parsley, chopped
225 g smoked haddock, skinned and cubed
250 g polenta

Method

  1. Cut polenta into thick fingers.

  2. Heat oil in a large pan. Add mushrooms and cook for 1 min, stirring. Turn down heat and add creme fraiche, mustard, parsley and smoked haddock. Stir well, cover and cook over gentle heat for about 6 min.

  3. Cook polenta under pre-heated grill for about 3 min on each side.

  4. Serve polenta with the mushroom and haddock sauce.
