Apple and tomato chutney - microwave

Serve with roast or grilled pork.

What you need

900 g cooking apples, washed, quartered, cored and sliced
450 g green tomatoes, roughly chopped
150 ml boiling water
450 g preserving sugar

Method

  1. Place the apples and tomatoes in a large bowl. Add the boiling water. Cover with a lid (or plastic film suitable for the microwave). Cook for 10 min on 100% (FULL) power. Stir thoroughly. Re-cover and cook for 5 min until fruit becomes pulpy.

  2. Remove lid and allow mixture to cool slightly. Puree mixture in a food processor or liquidiser - or rub through a sieve.

  3. Rinse the bowl and replace the puree. Add the sugar, stirring well. Cook uncovered for 20 min, stirring every 5 min.

  4. Pot, seal and label.

Serving suggestion

Cook's tip

If green tomatoes aren't available, use unripe red ones, although the colour will be pink rather than a pale green.
