Apple and pepper soup

A stylish and tasty soup.

What you need

350 g bramley apples, peeled, cored and sliced
2 red peppers, de-seeded and chopped
1 onion, peeled and chopped
4 plum tomatoes, quartered
2 cloves garlic, peeled
45 ml olive oil
600 ml tomato juice
150 ml water

Method

  1. Preheat grill to high.

  2. Place apples, peppers, onion, tomatoes and garlic in a large roasting tin. Add oil and toss well. Cook for 10-15 min, stirring occasionally, until charred and blackened.

  3. Leave to cool a little. Transfer the fruit and vegetables to a blender or food processor. Blend until smooth.

  4. Add tomato juice and water and blend again until smooth.

  5. Push through a nylon sieve and place in a pan. Gently bring to boil.

  6. Serve hot.

A swirl of creme fraiche and shredded fresh basil. Slices of toasted French bread.
