Cherry and almond cookies

These are very easy to do.

What you need

6 tsp golden syrup
150 g butter
100 g caster sugar
75 g porridge oats
50 g desiccated coconut
150 g plain flour
1 tsp bicarbonate of soda
3 tsp hot water
100 g ready-to-eat dried apricots, chopped
100 g green glace cherries

Method

  1. Place the syrup, butter and sugar in a saucepan over a low heat, stirring until melted and combined. Remove from the heat. Stir in the oats, desiccated coconuts and flour.

  2. Dissolve the bicarbonate of soda in the hot water. Stir into the mixture with the apricots and cherries. Leave to cool.

  3. Preheat oven to 160°C.

  4. Roll the cooled mixture into 30 balls. Space well apart on greased baking sheets.

  5. Bake in the oven for about 20 min until evenly golden brown. Leave to cool slightly before transferring to a wire rack.
